3. Check for any discoloration or a funny smell ( 8 ).

Foods containing eggs, like casseroles, should be cooked to a minimum internal temperature of 160°F (71°C) ( 2, 8 ). Although many people prefer undercooked eggs, certain populations should avoid this because they are at an increased risk of foodborne illness, including young children, older adults, people who are pregnant, and individuals with weakened immune systems ( 8 ).
